Zucchini Banana Bread

I love both zucchini and banana bread, so I thought why not have both? The combination proved to be a huge success as the bread vanished before my eyes.

3/4 cup coconut flour

1/4 tsp sea salt

1/2 tsp baking soda

1 tbsp cinnamon

2 large bananas mashed

1 large zucchini grated

4 eggs

ΒΌ cup coconut oil melted

1 tbsp vanilla

2 tbsp honey

2 scoops stevia (small scooper comes in the stevia container)

  1. Pre-heat oven to 325 degrees
  2. Line 2 loaf pans with parchment paper or grease them.
  3. In a medium bowl, mix all the dry ingredients coconut flour, sea salt, baking soda, cinnamon, and stevia (if powder, if liquid add to wet ingredients).
  4. Grate the zucchini (I use the food processor)
  5. In a large bowl mash the bananas, add eggs, vanilla, honey, and zucchini. Mix them all together.
  6. Add the dry ingredients to the wet ingredients and mix together.
  7. Put dough in loaf pans and place in oven for 1 hour.
