I love both zucchini and banana bread, so I thought why not have both? The combination proved to be a huge success as the bread vanished before my eyes.
3/4 cup coconut flour
1/4 tsp sea salt
1/2 tsp baking soda
1 tbsp cinnamon
2 large bananas mashed
1 large zucchini grated
4 eggs
ΒΌ cup coconut oil melted
1 tbsp vanilla
2 tbsp honey
2 scoops stevia (small scooper comes in the stevia container)
- Pre-heat oven to 325 degrees
- Line 2 loaf pans with parchment paper or grease them.
- In a medium bowl, mix all the dry ingredients coconut flour, sea salt, baking soda, cinnamon, and stevia (if powder, if liquid add to wet ingredients).
- Grate the zucchini (I use the food processor)
- In a large bowl mash the bananas, add eggs, vanilla, honey, and zucchini. Mix them all together.
- Add the dry ingredients to the wet ingredients and mix together.
- Put dough in loaf pans and place in oven for 1 hour.
