Twice Cooked Carnitas

I hate wasting food. But some leftovers take longer to get eaten than others. This meal is made from the leftover shredded Pork from my Pork Roast so that none of it goes to waste. With the added bonus of a quick and tasty meal with no prep time. The carnitas can be eaten as a salad or you can make it into fajitas, tacos, burritos, or wherever your creativity takes you. The best thing for me with this meal is it gives me my Mexican food fix since I can’t eat many of the spices that make Mexican food taste so good. And topping the Carnitas with Cilantro Lime Dressing really makes this meal awesome (and that is my own personal unbiased and humble opinion).

Ingredients:

Left over shredded pork from yesterday’s Pork Roast

1 lime, juiced

1/4 cup cilantro

1 tbs cumin

1 can black olives, diced or sliced

  1. Place the precooked shredded Pork Roast in a pan
  2. Season with lime, cilantro, cumin, and black olives.
  3. Heat on medium for 10-15 minutes
  4. Serve the Carnitas over salad, as tacos, fajitas, or burritos. Top it with Cilantro Lime Dressing
