Pork Dijon

I season the pork on the day I buy it, even if I am not cooking it that day. I rub all the ingredients on the pork and throw it in a freezer bag and put the onion and garlic in there as well, zip it up, label it, and freeze it. The day I make pork dijon all I have to do is take it out of the freezer to defrost and simply cook it up. (Pork Dijon is pictured with my Fried Cabbage).

6-8 pork chops

spicy brown mustard

onion powder

garlic powder

sea salt

black pepper

2 Tbsp coconut oil

4 cloves garlic minced

1/2 red onion diced

  1. Place pork chops on a cutting board, cut them to the size you prefer.
  2. Put a nickel sized dot of spicy brown mustard on each pork chop.
  3. Powder each pork chop with onion powder, garlic powder, sea salt, and black pepper.
  4. Spread mustard and seasonings all over the pork chop, then flip them and season the other side in the same manor.
  5. Melt coconut oil in a large frying pan on medium heat. Sauté onions and garlic.
  6. Place pork chops in the pan and place lid on top. Cook for about 10 minutes on each side (or until it is no longer pink in the center).
