I season the pork on the day I buy it, even if I am not cooking it that day. I rub all the ingredients on the pork and throw it in a freezer bag and put the onion and garlic in there as well, zip it up, label it, and freeze it. The day I make pork dijon all I have to do is take it out of the freezer to defrost and simply cook it up. (Pork Dijon is pictured with my Fried Cabbage).
6-8 pork chops
spicy brown mustard
onion powder
garlic powder
sea salt
black pepper
2 Tbsp coconut oil
4 cloves garlic minced
1/2 red onion diced
- Place pork chops on a cutting board, cut them to the size you prefer.
- Put a nickel sized dot of spicy brown mustard on each pork chop.
- Powder each pork chop with onion powder, garlic powder, sea salt, and black pepper.
- Spread mustard and seasonings all over the pork chop, then flip them and season the other side in the same manor.
- Melt coconut oil in a large frying pan on medium heat. Sauté onions and garlic.
- Place pork chops in the pan and place lid on top. Cook for about 10 minutes on each side (or until it is no longer pink in the center).
