I had some ripe bananas and fresh pineapple so I decided to give this recipe a try. It was loved by all, so I guess that makes it a keeper worthy of being blogged about.
3/4 cup coconut flour
1/4 tsp sea salt
1/2 tsp baking soda
2 large bananas mashed
1/2 fresh pineapple, diced
4 eggs
1/4 cup coconut oil melted
1 tbsp vanilla
2 tbsp honey (optional)
- Pre-heat oven to 325 degrees
- Line 2 loaf pans with parchment paper or grease them.
- In a medium bowl, mix all the dry ingredients coconut flour, sea salt, and baking soda.
- Finely chop up pineapple.
- In a large bowl mash the bananas, add eggs, vanilla, honey (optional), and Pineapple. Mix them all together.
- Add the dry ingredients to the wet ingredients and mix together.
- Put dough in loaf pans and place in oven for 1 hour.
