Pineapple Banana Bread

Servings: Makes 2 loaves

Prep time: 10-15 minutes

Cook time: 1 hour

I had some ripe bananas and fresh pineapple so I decided to give this recipe a try. It was loved by all, so I guess that makes it a keeper worthy of being blogged about.

3/4 cup coconut flour

1/4 tsp sea salt

1/2 tsp baking soda

2 large bananas mashed

1/2 fresh pineapple, diced

4 eggs

1/4 cup coconut oil melted

1 tbsp vanilla

2 tbsp honey (optional)

  1. Pre-heat oven to 325 degrees
  2. Line 2 loaf pans with parchment paper or grease them.
  3. In a medium bowl, mix all the dry ingredients coconut flour, sea salt, and baking soda.
  4. Finely chop up pineapple.
  5. In a large bowl mash the bananas, add eggs, vanilla, honey (optional), and Pineapple. Mix them all together.
  6. Add the dry ingredients to the wet ingredients and mix together.
  7. Put dough in loaf pans and place in oven for 1 hour.
