Ham and Butternut Squash Soup

Butternut squash and ham go so well together and we have finally had some official Fall weather, so an order of soup was on the menu for our family. Even my pickiest eater was pleased with this soup.

2 lbs Ham (diced)

1/2 Sweet Onion (diced)

6 cloves Garlic (minced)

2 cups Spinach (sliced)

1 cup Chicken Broth

2 cups Butternut Squash Puree (I make and freeze this ahead of time)

1 tsp Black Pepper

1 lb Broccoli (cut as small as desired)

  1. Placed diced ham and onions into a large pot, cook on med-high heat.
  2. Add in garlic, spinach, chicken broth, butternut squash puree, and black pepper. Let it cook for 15 minutes.
  3. Add in broccoli and simmer for 10 minutes. If you desire thicker soup, simmer with the lid off.
