We have cooked this chicken on the grill and on the stove top, both are good. I think the grill is best (less cooking for me, since my hubby runs the grill). This chicken needs to marinate for 24 hours, so plan ahead the night before.
8-10 chicken thighs
3 lemons
8 cloves garlic, minced
2 tbsp oregano
1 tsp black pepper
1/2 tsp sea salt
3 green onions, sliced
2-3 tbsp avocado oil
- Put chicken thighs in a ziplock bag, squeeze in the juice of 2 lemons and slice up the 3rd lemon and put slices in the bag.
- Add in the garlic, oregano, black pepper, sea salt, green onions, and avocado oil in the bag. Zip it up and let it marinate for about 24 hours. You could also prepare this meal in a ziplock bag and freeze it for another day.
- Cook on stove top or on the grill.
