Frittata Pizza

Every once in a while I get a craving for pizza. I came up with this recipe to help me make good food choices even when I have cravings. This dish is so versatile, you can add whatever you want on top of it. It’s a great way to get rid of leftover meat and extra veggies.

Servings: 5-6

Prep time: 10 minutes

Cook time: 25 minutes

Frittata:

10-12 eggs

sea salt

black pepper

1 tbsp dried oregano

1/4 cup fresh spinach diced

1/2 C Nomato Sauce

1/4 cup fresh basil chopped

1/2 red onion diced

3 pieces crumbled bacon

2 tbsp coconut oil, butter, or bacon grease (or any combination)

  1. Pre heat oven to 400 degrees. In a large mixing bowl add and mix eggs, sea salt, black pepper, oregano, spinach, and Nomato sauce.
  2. Then add basil, onion, and bacon to the egg mix, keep some of each ingredient out to sauté in the pan.
  3. In an stove/oven safe pan (cast iron works great) add the oil, butter, or bacon grease in the pan and cook on high heat. When the oil is melted add the rest of the basil, onion, and bacon. Spread it out evenly in the pan.
  4. Once the veggies are slightly browned add the eggs in and lower heat to low. Cook on stove top for approximately 5 minutes (bottom will be cooked but top will still be runny).
  5. Place in oven for 4-5 minutes. Top should be slightly browned.

Spread a thin layer of Nomato sauce over the cooked frittata. Dice up the toppings, place them on the pizza, and cook in oven at 400 degrees for 10-15 minutes.

These are the ingredients that I usually use, but almost anything will work. Make sure all your meat is pre cooked.
