Grain-Free Banana Nut Muffins

Our family needs a banana tree, you would think we are raising monkeys with the amount of bananas we go through. These muffins are soft, moist, and delicious. The best thing about them is they lack all the side effects of wheat flour.

1 Cup Almond Flour

1/2 Cup Coconut Flour

1 Teaspoon Baking Soda

1/4 Teaspoon Sea Salt

4 Eggs

3 Mashed Bananas

1/4 Cup Coconut Oil

1 CupĀ Coconut Milk Sweetened with Stevia

1 Teaspoon Vanilla

1/4 Cup Honey

1/4 Cup Chopped Pecans

  1. Preheat oven to 350 and grease a muffin pan (I love usingĀ silicon muffin pans)
  2. In a medium bowl mix almond flour, coconut flour, backing soda, and sea salt.
  3. Using an electric mixer mix in the eggs, bananas, coconut oil, coconut milk, vanilla, and honey.
  4. Mix in the chopped pecans.
  5. Fill the muffin cups and cook in the oven for 35-40 minutes.
