Crustless Quiche is what I make when I am stuck in a rut for dinner. I always have the items needed for this dish in my fridge. This is a great breakfast dish too. You can throw pretty much anything in it. These also make great little muffins that can be enjoyed hot or cold.
10 eggs
1 zucchini, chopped
1/2 cup spinach, chopped
1/4 onion, diced
1 TBSP oregano (optional)
1 TSP black pepper
Dash of sea salt
Butter or coconut oil to grease pie dish
(other things I’ve used were ham, sausage, broccoli, yellow squash).
- Pre heat oven to 350 degrees. Scramble the eggs in a large mixing bowl.
- Add all the meat, veggies, and seasonings and mix it all together.
- Grease a pie dish with either butter or coconut oil (coconut oil does give the eggs a coconut flavor that can taste a bit interesting).
- Put egg mixture in pie dish and place in the oven for 1 hour.
- Top with fresh avocado and salsa if desired.
