Crustless Quiche is what I make when I am stuck in a rut for dinner. I always have the items needed for this dish in my fridge. This is a great breakfast dish too. You can throw pretty much anything in it. These also make great little muffins that can be enjoyed hot or cold.

10 eggs

1 zucchini, chopped

1/2 cup spinach, chopped

1/4 onion, diced

1 TBSP oregano (optional)

1 TSP black pepper

Dash of sea salt

Butter or coconut oil to grease pie dish

(other things I’ve used were ham, sausage, broccoli, yellow squash).

  1. Pre heat oven to 350 degrees. Scramble the eggs in a large mixing bowl.
  2. Add all the meat, veggies, and seasonings and mix it all together.
  3. Grease a pie dish with either butter or coconut oil (coconut oil does give the eggs a coconut flavor that can taste a bit interesting).
  4. Put egg mixture in pie dish and place in the oven for 1 hour.
  5. Top with fresh avocado and salsa if desired.
