Having healthier choices for snacks is what makes our family able to stay on the Paleo diet. We love these cookies and they even seem to be loved by others that don’t follow the Paleo diet. The chocolate chips are optional, but my family tends to disagree. These cookies freeze well, so you will always be able to have fresh cookies on hand without having to bake constantly.
1 cup coconut flour
1 tsp baking soda
1/2 cup unsweetened coconut flakes
6 eggs
1/2 cup maple syrup
3 tbsp honey
1 cup melted coconut oil
1/2 cup coconut milk
1/2 cup dark chocolate chips (optional)
- Pre-heat oven to 350 grease cookie sheet(s).
- Mix all the dry ingredients together coconut flour, baking soda, and coconut flakes.
- In a separate bowl, mix the wet ingredients together egg, syrup, honey, coconut oil, and coconut milk.
- Mix wet and dry ingredients together, and add chocolate chips if desired.
- Spoon dough out onto the greased cookie sheet. Cook each batch for 18-20 minutes.
