Brussel sprouts probably got a bad rep because they were steamed or boiled to death. Cooking brussel sprouts in coconut oil and seasoning them right makes all the difference. Brussel sprouts aren’t a dirty word in our house.
2 TBSP coconut oil
1/2 onion, diced
4 cloves garlic, minced
10-15 brussel sprouts, sliced
Juice of 1 lemon
Sea salt and black pepper to taste
- Heat coconut oil in a large skillet, sauté onions and garlic.
- Add brussel sprouts and sprinkle lemon juice on top. Add a couple slices of the lemon in the mixture while it is cooking to add more citrus flavoring (remove before eating).
- Stir brussel sprouts, cook them for about 8 minutes on medium to high heat. Salt and pepper them and serve.
