Chocolate Swirl Cookies

Servings: Makes 2 dozen cookies

Prep time: 10 minutes

Cook time: 12-14 minutes per batch

These cookies are so good!!! They are soft and chewy. You can mix in the chocolate chips while the dough is still warm so that they chocolate is swirled throughout the cookie or you can wait for the dough to cool and have chocolate chips in the cookie.

1/2 cup Honey

1/4 cup Butter or Ghee

1/2 tsp Vanilla

2 cups Almond Flour OR Cashew Flour

2 tbs Coconut Flour

1/2 tsp Xanthan Gum OR 1/2 cup Arrowroot Powder

1 tsp Baking Soda

1/4 tsp Sea Salt

1 cup Chocolate Chips

  1. Preheat oven to 350 degrees.
  2. Heat honey in a small pot on medium-high heat. Once it starts to boil reduce to low heat and simmer for 5 minutes, stir frequently.
  3. Turn off the heat and add butter and vanilla, mix with spoon until the butter is completely melted.
  4. In a medium mixing bowel add almond orcashew flour, coconut flour, xanthan gum orarrowroot powder, baking soda, and sea salt. Mix all dry ingredients by hand.
  5. Add honey mixture to dry ingredients, mix with an electric mixer.
  6. Add chocolate chips to the dough when it is hot for a marbled chocolate look or wait until the dough is cooled for actual chunks of chocolate chips.
  7. Bake for 12-14 minutes. ENJOY!!!
