Cumin Chicken

Cumin is one of my favorite spices. Guacamole is a great compliment to this meal. If you are on a night shade free diet you’ll have to try my night shade free guacamole (I need to post it). The longer you let the chicken marinate the more flavorful it will be. This meal can also be prepped ahead of time and frozen.

2 lbs Chicken (breasts or thighs)

1/2 Red Onion, sliced or diced

1/2 cup Cilantro, chopped

5 tbsp Cumin

1/2 tsp Sea Salt

1 tsp Black Pepper

1 Lime, juiced

2-3 tbsp Avocado oil (olive oil will work too)

  1. Place all the ingredients in a container or ziplock bag to marinate (needs to marinate for at least 1 hour, preferably 24 hours).
  2. Cook chicken in a large skillet on high until slightly browned. I have not made this in the crockpot but I bet it would work.
