When I make up a new meal that the family agrees is a keeper our whole mealtime conversation goes into naming it so I can blog it. I credit the name of this meal to my husband. In the Marine Corps everything is an acronym. You can take the Marine out of the Corps, but you can’t take the Corps out of the Marine.
Ingredients:
1 tbs bacon grease
1/2 onion, diced
1 lb chicken, diced or sliced
4 cloves garlic, minced
handful spinach, chopped
1 lb brussel sprouts, steamed and quartered
1/2 tsp black pepper
1/2 tsp thyme
1/2 lb bacon cooked and sliced
- Cook the bacon, if it’s not already cooked.
- Sautee onions in bacon grease, once browned add in diced chicken.
- Mix in garlic and spinach, allow the chicken to cook all the way through. Stir often
- In a medium pot boil the brussel sprouts for 5 minutes. Once done drain the water and let them cool, when cooled cut of the ends and quarter them. Add to chicken once chicken is cooked.
- Season with black pepper, thyme, and top with bacon.
- Place over bed of Fried Cabbage (optional).
