Beef Stroganoff

Our family loves Beef Stroganoff. So I wanted to come up with something that fit into our Paleo diet.  The first words we heard at the dinner table were “May I have some more please?” I’d say it was a huge success.

Servings: 5-6

Prep time: 10 minutes

Cook time: 35 minutes

2 lbs ground beef

1/2 red onion diced

6 cloves garlic minced

2 tbsp butter

6 large fresh basil leaves chopped

2 tbsp oregano

1 tsp black pepper

1/2 tsp sea salt

4 tomatoes diced

1/2 cup fresh spinach diced

1 bell pepper diced

1 zucchini chopped

1 large carrot chopped

3 tbsp balsamic vinegar

1/2 cup coconut milk (substitute heavy cream if you want it creamy)

  1. Put a dash of olive oil in a large skillet and place it on medium heat,  saute onions and garlic.
  2. Brown the ground beef with the onions and garlic. Once cooked, drain the beef (slightly).
  3. Add and mix in butter, basil, oregano, pepper, and salt.
  4. Add in the tomatoes, spinach, bell pepper, zucchini, carrot, and balsamic vinegar. Put lid on and reduce heat. Let it simmer for 20 minutes.
  5. Stir in coconut milk, and let it simmer with lid on for 5 more minutes.
