Our family loves Beef Stroganoff. So I wanted to come up with something that fit into our Paleo diet. The first words we heard at the dinner table were “May I have some more please?” I’d say it was a huge success.

2 lbs ground beef
1/2 red onion diced
6 cloves garlic minced
2 tbsp butter
6 large fresh basil leaves chopped
2 tbsp oregano
1 tsp black pepper
1/2 tsp sea salt
4 tomatoes diced
1/2 cup fresh spinach diced
1 bell pepper diced
1 zucchini chopped
1 large carrot chopped
3 tbsp balsamic vinegar
1/2 cup coconut milk (substitute heavy cream if you want it creamy)
- Put a dash of olive oil in a large skillet and place it on medium heat, saute onions and garlic.
- Brown the ground beef with the onions and garlic. Once cooked, drain the beef (slightly).
- Add and mix in butter, basil, oregano, pepper, and salt.
- Add in the tomatoes, spinach, bell pepper, zucchini, carrot, and balsamic vinegar. Put lid on and reduce heat. Let it simmer for 20 minutes.
- Stir in coconut milk, and let it simmer with lid on for 5 more minutes.
