Fall is my favorite season. Full of freshly harvested vegetables. With the crispness in the air it is the perfect time of year to enjoy a warm stew at the dinner table surrounded by loved ones.
4 strips of bacon (save the bacon grease)
1/2 red onion, diced
6 cloves garlic, minced
2 lbs ground beef or ground turkey
3 tbsp balsamic vinegar
1/2 butternut squash, diced
1/4 of a head of green cabbage, chopped
2 tbsp oregano
1 tbs black pepper
1/2 tsp sea salt
1 cup spinach or kale, sliced
1 head of broccoli, cut into pieces
Instructions:
- Cook bacon in skillet, when it is cooked transfer 2 tbsp of bacon grease into a large pot and leave the rest of the bacon grease in the skillet.
- In the large pot, sauté the onions and garlic on medium heat. Once cooked add in ground beef or ground turkey.
- In the skillet cook the diced butternut squash and cabbage in the rest of the bacon grease. Cook until slightly browned.
- Add balsamic vinegar, oregano, black pepper, and sea salt into pot with meat. Once the meat is fully cooked add in the vegetables Spinach or kale, broccoli, cooked butternut squash, cooked cabbage, and cooked bacon crumbled.
- Cook on medium heat with lid on for 10 minutes, stirring frequently.
- Serve and enjoy with your family!
