This recipe is great if you have picky eaters. The chili flavor drowns out the vegetables and if they are diced up small enough your picky eaters won’t even know that they just ate a whole salad in their chili. Remove the bell peppers in the picture for a nightshade free recipe.
2 lbs ground beef
1/2 lb Italian pork sausage (casing removed)
1 red onion diced
6 cloves of garlic minced
1 tsp sea salt
1 tsp black pepper
2 tbsp dried oregano
3 tbsp cumin
1/2 cup fresh cilantro
5 celery stocks diced
1 cup chopped fresh spinach
1 zucchini diced
16 oz chicken broth
- Place the meat, onions, and garlic in a large pot on medium heat.
- Mix in the seasonings salt, pepper, oregano, and cumin. Brown the meat, stir frequently.
- When the meat is cooked add in the cilantro, celery, spinach, and zucchini.
- Add in chicken broth and simmer for 30 minutes.
- Top with plantain chips and or avocado if desired.
