Baked Pears

Cook time: 30 minutes

Servings: 3-6

A dessert that actually tastes like a dessert made with fruit and nuts. It is fabulous. My kids get so excited when we have very ripe pears (peaches work really well with this recipe too).

3-4 ripe pears (the riper the better)

1/2 cup chopped salted and roasted almonds

1/2 cup raisins

1/4 cup unsweetened coconut flakes

6 pitted dates

2 TBS coconut oil

1 TBS cinnamon

  1. Pre-heat oven to 350 degrees.
  2. Cut pears in half and remove stem and seeds. I make a little ridge for the stuffing to sit in.
  3. Place all of the above ingredients (minus the pears) in the food processor and blend to the consistency in the picture.
  4. Line oven safe dish or cookie sheet with parchment paper or foil. Place pears in dish and fill with stuffing.
  5. Cook in oven uncovered for 30 minutes.
