I am trying to find recipes that don’t have vegetables with nightshades in them (the one’s I use most are tomatoes and bell peppers). A tomato base is what I use in most recipes, but I suppose a bacon base is not a bad substitute.
1/2 lb bacon
1/2 red onion, diced
2 lbs chicken, diced
6 cloves garlic, minced
6 basil leaves, sliced
1 tbsp Italian seasoning
1 tsp black pepper
1/2 cup spinach, sliced
1 lb broccoli, cut in pieces
1 squash, sliced or diced
1 tbsp coconut oil
1/4 cup almonds, chopped
- Cook the bacon, when it is done put it a side. Leave about half of the bacon grease in the pan.
- Saute onions in the bacon grease then add in chicken.
- Once the chicken is cooked add in garlic, basil, Italian seasoning, black pepper, and spinach, cover and cook on medium heat.
- In a small pan heat up coconut oil on medium heat, when oil is hot add almonds. Stir frequently, remove from heat when browned.
- Add squash and broccoli to chicken, Cook for 5-10 minutes on medium heat with lid on.
- Top with roasted almonds and serve.
