Bacon Stir Fry

I am trying to find recipes that don’t have vegetables with nightshades in them (the one’s I use most are tomatoes and bell peppers). A tomato base is what I use in most recipes, but I suppose a bacon base is not a bad substitute.

1/2 lb bacon

1/2 red onion, diced

2 lbs chicken, diced

6 cloves garlic, minced

6 basil leaves, sliced

1 tbsp Italian seasoning

1 tsp black pepper

1/2 cup spinach, sliced

1 lb broccoli, cut in pieces

1 squash, sliced or diced

1 tbsp coconut oil

1/4 cup almonds, chopped

  1. Cook the bacon, when it is done put it a side. Leave about half of the bacon grease in the pan.
  2. Saute onions in the bacon grease then add in chicken.
  3. Once the chicken is cooked add in garlic, basil, Italian seasoning, black pepper, and spinach, cover and cook on medium heat.
  4. In a small pan heat up coconut oil on medium heat, when oil is hot add almonds. Stir frequently, remove from heat when browned.
  5. Add squash and broccoli to chicken, Cook for 5-10 minutes on medium heat with lid on.
  6. Top with roasted almonds and serve.
