Crock Pot: 6 Hours

It is said that, chicken soup is good for the soul. I finally got the hint (after several suggestions) that my husband desired for me to make chicken soup. This soup is hearty and full of nutrients, and guaranteed to make you feel right at home. 

1-2 Lbs- Chicken Breast (diced)

2 tbs Avocado or Olive Oil

4 Cups- Chicken Stock/Broth

2 Onions (diced)

8 Cloves Garlic (minced)

1 tsp Black Pepper

1/2 tsp Sea Salt

1 Lb Carrots (sliced or diced)

Stalk Of Celery (7-8 ribs, sliced)

1 Cup Spinach (sliced)

1 Cup Kale (sliced)

STOVE TOP:

  1. Using a pan, turn stove top to medium heat, add oil then place 1/2 of diced onions in pan.
  2. Once the onions are sautéed add diced chicken.
  3. Using a large pot, set the heat to medium and heat up the chicken broth and add in the rest of the onions, garlic, black pepper, sea salt, carrots, and celery.
  4. When the chicken is fully cooked, add it to the big pot along with the spinach and kale.
  5. Allow it to simmer for at least 20 minutes.

CROCK POT:

  1. Cut up all ingredients and place them in the crock pot.
  2. Cook on high for 6 hours
